Honey roasted spiced peanuts

Low on sweet and a hint of spice who can say no to cruncy peanuts on the platter.

Ingredients


2 cups Dry Peanuts.
1/3 cup Honey.
½ cup sugar.
½ tsp salt
½ tsp crushed black pepper.

Directions

  • In a flat pan dry roast the groundnut in low heat tossing it continuoulsy till it turns a shade darker all over.
  • Let it cool.
  • Microwave the honey in a medium bowl for 30 seconds. It will start to bubble up a bit.
  • Remove from the microwave and add the sugar, crushed pepper, salt and mix well.
  • Pour the peanuts into the vessel containing honey sugar mixture. Mix well till all the peanuts are coated.
  • Line a tray with parchment paper and pre heat the oven to 170 C.
  • Spread the honey coated peanuts on to the tray and spread it flat all around the tray.
  • Bake the peanuts for 30 minutes, tossing it from side to side every 5 minutes.
  • Once done immediately trasnfer the contents of the tray to a flat vessel with a layer of oil or ghee on it.
  • Seperate the groundnuts with a fork.
  • Serve when cool.

    Recipe Notes
  1. Can substitute with Ceyenne pepper or chilly flakes.
  2. Increasing the sugar by another quarter up would give more carmalised cruncy shiny coat around the groundnuts.
