The tawa I used is a nonstick 28 cms from VINOD.

Set dosa|Kali Dosa|Sponge dosa|Oil free dosa

- 2 cup Idly rice
- 1/4 cup Split dehusked black gram. (Urad dal)
- 1/2 cup Flattened rice
- 1 tsp Salt
- Soak the rice, black gram, fenugreek seeds in 3 cups of water, till all the ingredients are well soaked about 4 hours.
- Grind them into a smooth paste with required water, to make it a thick smooth paste.
- Set aside.
- Wash the flattened rice with water atleast twice.
- Add 1/2 cup of water to the washed flattened rice and saok for 15 minutes.
- Grind it in a smooth paste. Check to see there are no lumps.
- Add the ground flttened rice to the batter we made with rice and other ingredients.
- Mix/ grind them all together for a few more seconds.
- Transfer to a clean vessel, close with a lid and set aside for 4 hours to ferment.
- Now the batter is ready. Add water 1/4th cup at a time if the bater is too thick.
- The batter should be in a spreadable consistency.
- Add salt.
- Now heat a tawa and take small portion of the batter to make a sponge dosa.
- WIpe the hot tawa with a cloth/ paper towel with a spoon of oil.
- Spread it into a 1/4th inch thick dosa of 6 inch diameter.
- Watch the pores form all over. Close it with a lid to cook the top.
- Set dosa is ready.
- Serve it with chutney podi/Gojju/ or coconut chutney for a filling breakfast.

The par boiled rice is rolled and flattened and dried to make the flattened rice. Based on the pressure used to flatten the rice, the thickness of the flattened rice varies.

Flattened rice also called as Poha/ Avalakki/ Avil. It is just rice that has been flattened to make it easy to cook or not cook at all. Poha or flattened rice is pale in texture compared to the rice. It is tasteless on it own. But can absorb all flavours when it is hydrated with water.

Tips to make a perfect Whole wheat dosa
[/cz_title][cz_title id=”cz_88407″]1. Pouring the dosa batter on to the skillet defines the pores of the dosa. Keep your laddle 6-8 inches from the tawa while pouring the batter.
2. If the dosa batter is too thick there will be very little holes. Add 1/4 cup of water to test again.
3. The batter can be kept in the refrigerator and used with in 12 hours.
