Avil upma also know as Atukulu upma or Avalakki upma or Kanda poha or poha upma, is my comfort food. Warm and mildly flavoured, sweetened by the coconut seasoning and crunchy groundnuts once in a while. It is one of the easiest South Indian breakfast recipes.

Flattened rice also called as Poha/ Avalakki/ Avil. It is just rice that has been flattened to make it easy to cook or not cook at all. Poha or flattened rice is pale in texture compared to the rice. It is tasteless on it own. But can absorb all flavours when it is hydrated with water.

Tips to make a perfect Whole wheat dosa

- Soak the poha for 10 minutes. Do not over soak, else the poha will become a mush.
- Drain the excess water if any, do get a perfect consistency of the upma.
- Add any spices or salt while making any poha recipe, when the poha is soaked and is drained of water. It distributes the flavours evenly.
- Cook the soaked avil/poha/avalakki in the pan with the lid closed for a few minutes in low heat to get them all uniformly heated. High heat will make the avil/poha stick to the pan.

Recipe
Avil upma – Atukulu upma – Avalakki upma – Poha Upma
One of the easiest and healthy south Indian breakfast recipes.
- 1 Cup Firm poha/avil/atukulu
- 2 Cup Water
- 1 tsp Salt
- 1 cup Finely sliced onions
- 2 Piece Green chilly finely chopped
- 4 Pieces Curry leaf
- 1/4 cup Groundnuts (optional)
- ¼ cup Grated coconut
- 1 tbsp Fresh lemon juice
For the seasoning
- 1 tbsp Urdh dal
- ½ tbsp Chana dal
- 2 tbsp GIngely oil
- 1 tsp Turmeric
- Soak the poha /avil in 2 cups of water. Soak only for 10 minutes. Do not over soak.
- Add the salt while it is soaking in water. It helps in distributing the salt evenly.
- Drain the poha of excess water. Set aside. Now in a hot pan add the oil and seasoning.
- Add the finely cut onions, curry leaf. Saute.
- Saute till the onions turn translucent.
- Lower the heat and add the soaked drained poha/avil/avalakki/atukulu to the roasted onions mixture.
- Cook the upma with the lid closed to allow the steam to cook everything uniformly.
- Add the grated fresh coconut
- Add the lemon juice. Stir well.
- Serve hot.
