It is raining heavily since morning and the weather is beautiful. Not in a mood for a bajji or bonda, Maybe an offbeat fried Yam fry | Senai fry with tea sounds perfect. (Senai) Senaikazangu in Tamil also called elephant foot yam in English, Suvarnagadde in Kannada, and many more interesting names all over India. Look at the beauty of the name “SuvarnaGadde” – which translates to “Golden tuber”. Grown in abundance in tropical countries, it is used in numerous recipes in different forms and sizes. I am making the pepper salt seasoned version of it today. Will post the nadan spicy yam fry soon.
Elephant foot yam (Amorphophallus paeoniifolius) in the Arum (Araceae) family. Known for its abundance in tropical climates, this Yam | or Seenai is a good source of ——-. It is used in many forms in Indian cuisine. It is consumed in its plain cooked and sauteed form, or in curries in many households. Paired with fish this meaty vegetable is a delicacy in the coastal regions of India. Elephant foot yam also treats dysentery, asthma, swelling of lungs, vomiting, and abdominal pain. It is highly regarded as a health food in India.

Ingredients
Select a yam that is fresh and with the peel. I see so many supermarkets selling the cut, peeled sliced yam, making it easy for the customer. But trust me a fresh Yam slice in minutes as you can see in the video. If you are lucky, you might find a yam with a fresh sprout on top. Plant it in your garden, you have your own organic yam. This Yam fry | Senai fry recipe if an offbeat recipe I picked up from my friend and made it my own.
Where to buy fresh Yam?
Streetside vegetable vendors are the best. In Kerala, I used to get the best of the produce from them. Here is an interesting article about Yams.
Yam fry |Senai Fry
- ½ kg Yam
Seasoning
- 2 tbsp Pepper
- 1 cup Curry leaf, cleaned and pat dried.
- 2 tsp Salt
Cut, peel the yam.
Wash and pat dry.
Cut it into 1/4 inch uniform cubes.
Heat the oil and add two handfulls of the cut yam in it to deep fry.
The yam cooks slowly, so allow it 3-4 minutes to fry well.
The bubbles in the oil reduce and the crisp yam floats up.
Yam would be crisp when retrieved from oil.
Fry the rest of the yam in small batches. Set aside.
In a microwave safe plate, place the cleaned,dried curry leaves. Micriwave for 1 minute.
The curry leaves would turn crisp with no oil.
Seasoning.
Mix together the pepper, salt and curry leaf.
Add it to the fresh fried yam. Serve immediately.
